Hey there my lovelies,
Another health recipes for you guys today which can be eaten hot or cold which is great for a day at the beach so here are the ingredients that you will need.
Ingredients (for two persons)
- 160g Brown pasta (uncooked)
- 4 medium sized onions (the white onion is the best or you can opt for the frozen onions)
- Garlic (you can use chopped garlic)
- 2 medium sized Aubergines (or 1 large one)
- 6 medium sized Courgettes
- one yellow and one red bell peppers
- Cherry tomatoes
- Herbs and pepper for taste
- Coconut or olive oil for for taste (not necessary if you do not like oil)
Method
- Chop all the vegetables in small cubes
- Chop theΒ onions and garlic (if you are using fresh)
- Whilst chopping but the oven on to a temperature of 200 degrees (fan oven)
- Place the onions and garlic at the bottom of your cooking dish and then add all the chopped vegetables
- Sprinkle the dish with herbs, pepper and the oil and mix it all up so the herbs are all is mixed well
- Place in the oven and cook for about 40mins
- Start cooking the pasta to your preferred liking and when ready leave to drain
- When the dish is in it’s last 10 minutes of cooking time add as many cherry tomatoes as you like
- When the 40 mins are up let the Β vegetables cool off for a bit and add the pasta and mix in all together
